Today is a beautiful day!  One of those days that just makes you happy and excited for the Summer season ahead.  My husband is working on his culinary talents and made a very yummy meal of buffalo chicken grilled cheese and fresh green beans.  I remember when he didn’t know how to boil spaghetti!  This was certainly an improvement.  Yum!

Ingredients (makes enough for 2)

  • 2 boneless skinless chicken breaks
  • 4 slices whole wheat bread
  • Franks Hot Sauce
  • Butter for the outside of the bread
  • 4 slices of pepper jack cheese
  • salt/pepper/paprika/cayenne/garlic powder to taste

Directions:

Season the chicken breasts to taste with the spices (we like it hot so Nick coated the chicken liberally).  Cook over medium heat in a saucepan until cooked through.  In the meantime, butter each slice of bread and place two slices of cheese inside, with the butter side out.  Grill on griddle over medium heat until browned and cheese is melted, flipping once to ensure both sides are browned.  Remove from heat and set aside.  When chicken is almost done, coat with Frank’s Hot Sauce and cook about 1 minute more.  Remove chicken from pan and cut into small slices.  Place inside container with lid and shake to coat with more Frank’s if desired. Then place chicken inside the grilled cheese for a yummy buffalo chicken sandwich!
